
Rustic, Francis's Favorites, a Michelin-rated restaurant located at Francis Ford Coppola Winery in Geyserville, is seeking a dynamic Sous Chef. This person will be responsible for all aspects regarding cuisine. Responsible for ordering, prep lists, consistency in recipes, cooking and plating.
Executes leadership, sales, service and oversees daily operational functions for wine club operation by performing the following duties.
This position will work within the viticulture department checking on contracted vineyards in Sonoma, Lake and Mendocino Counties and potential other areas in California to ensure growers are growing the highest quality grapes for our wine programs. This position will start in June and end in November, hours may include weekends and days longer than 8 hours. Some laboratory work will occur later in the harvest.
This position requires a person who possesses not just excellent cooking skills but, in our effort to create a destination restaurant, the prep cook is pivotal in maintaining a well organized walk-in refrigerator for preparing and presenting products of the highest quality. While working in a clean, orderly and safe fashion, the prep cook must work closely with the chef and all other kitchen staff to create a tightly knit team of professionals who present a unified team. Above all, the prep cook must do all he/she can to contribute to an environment where professionalism, cooperation and enthusiasm can flourish among the restaurant staff.

This is a hands-on supervisory management position responsible for creating exceptional guests experiences in RUSTIC, Francis's Favorites and the Pool Cafe. He/she will model and create an environment in which the guest is cared for and satisfied. He/she will hold the service staff accountable to professional standards.
